Dough: New Sleek Bakery Cafe at Chijmes

If you’ve ever stopped by Chijmes for a spot of afternoon tea and coffee, you’ll most likely have visited the massively popular cafes Glasshouse and Hvala.

You can now add this to your options the next time you’re at City Hall, with the new bakery cafe upstart by the folks at Glyph Supply Co, aptly named Dough.

Inspired by bakeries overseas, the group set out to achieve the same with their own comfort bakes and hearty food options, and they even make their own pastas in-house, aside from their freshly baked pastries and bread of course.

With wide glass windows, minimalist white furnishing and wooden accents, daylight pours into this cafe beautifully.

Their bakes are displayed near the counter, where you’ll stand to have a browse regardless if you’re dining in or taking them away.

There are plenty of seats here, though it does get quite crowded and bustling even for a weekday lunch.

Once the crowd disperses after lunch hour and the cafe quietens down though, Dough is quite a nice space to spend some time in over a cup of coffee and book in hand.

For bakes, we chose to get the Strawberry Brioche (S$5) and Kouign Amann (S$5).

The Strawberry Brioche looked interesting, and came topped with a very crumbly meringue. The bread is filled with strawberry compote and custard, which had a nice sour twang balancing out the sweetness of the meringue. I liked how generous they were with the filling as well.

The Kouign Amann was the winner of the two we had though, as the braided pastry was crispy on the outside and delightfully buttery on the inside. The best Kouign Amanns usually tread a delicate balance of sweet and savoury, buttery but flaky, and Dough gets this perfectly. A classic French pastry, it’s easy to see why many other tables ordered this as well.

My only gripe though, was that I wish the trays we used to pick out the bakes weren’t the actual trays used for serving.

The aesthetic of the pale teal trays on every table seemed a bit at odds with the setting we were in, and seemed more fit for a canteen than a beautiful bakery cafe at Chijmes.

As someone who’s a stickler for food presentation and aesthetics, I felt some minimalist, nice looking plates would have made a world of difference.

Should you be interested in their mains, they have pastas, burgers and meats to choose from, but these are a lot more pricey, with prices running from S$22 to S$36.

The Black Coffee (S$4.50) here is pretty strong, but I felt the Iced Matcha Latte (S$7) was a little diluted, and lacked the rich, earthy, slightly bitter aftertaste that the best matcha lattes have.

All in all, Dough is a promising bakery cafe, and it’s nice to have a new option in Chijmes to go to.
